Melon pan is an enriched dough much like a brioche that is wrapped in a thin, sweet and crunchy cookie.
Surprisingly, there is no melon in this bread as the name may suggest. The name stems from the pattern that is scored across the top before baking.
Best eaten warm or filled with custard and cream 😋

Our bread is best eaten within the first couple of days. If you want it to last longer, we suggest you store in the freezer.
The best way to freeze shokupan (or any bread) is to slice it up and freeze them; separated with wax paper if you store them together. When ready, put the slice directly into the toaster. No thawing needed!
If you freeze the entire loaf, thaw in the oven for the best results (325F for about 20-30 minutes is what we do, but adjust depending on your oven!). Thawing on the counter doesn't preserve the texture properly.
